½ cup coconut flour / sifted
1 cup almond flour /sifted
¼ ground golden flax seeds
1 teaspoon baking soda
¼ teaspoon sea salt
½ cup applesauce (unsweetened)
¼ cup honey
1 tablespoon pure vanilla extract
¼ cup melted coconut oil
1 1/3 dairy free chocolate chips (60% or 70% cacao)
DIRECTIONS for Paleo Cookie Dough Bites
First, line a baking sheet with parchment paper.
Add almond flour, coconut flour – ground flax seeds, baking soda and salt in a mixing bowl and whisk to combine. Add the applesauce, 1/3 cup of the chocolate chips, coconut oil, honey and pure vanilla extract. Mix it until well combined.
Use scoop (size 40*) with a lever or a spoon to make about 16 cookie bites. Place them on the prepared baking sheet and freeze for at least 2 hours.
To make the dipping chocolate, place the remaining 1 cup of chocolate chips in double boiler* and melt over low heat.
When the chocolate is just melted, remove from the heat.
Insert a toothpick into the bottom of a bite of frozen cookie dough, then dip it into melted chocolate.
Let the excess chocolate run off, then slide the bite off the toothpick onto the lined baking sheet, repeat with the rest of the bites until all of them are coated.
Enjoy cold, straight from the freezer.
- You can melt chocolate in the microwave, just place chocolate in a heatproof bowl for 30 seconds at a time, stirring after each time
- You can create a double boiler with a saucepan and a stainless-steel mixing bowl that is large enough to set on top of saucepan.
- Scoop size #40 the makes 3/4 ounce scoops which are about 1.5 inches in diameter, a little smaller than a ping-pong ball.
