
Chicken Green Bean Soup
Prep: 15 min; Cook: 40 min; Makes 9 servings; .
250 g chicken breast cut in cubes
1 cup chopped onion
1 cup chopped carrots
2 medium potatoes diced
2 teaspoons olive oil
6 cups organic low sodium chicken broth
1 pound fresh green beans, cut
2 garlic clove, minced
1 can condensed Tomato Soup
½ cup frozen corn
1 tablespoon dried basil
salt and pepper
- In a large saucepan, saute finely chop onion in olive oil for 5 minutes.
- Add chicken breast, frying briefly. Then add carrots and stir all the ingredients for a few minutes.
- Clean the string beans and cut into smaller pieces, cut the potatoes into cubes.
- Stir in the broth, potato, beans, corn and garlic; bring to a boil. Reduce heat; cover and simmer for 25 minutes or until vegetables are tender.
- Add basil, tomato soup, salt and pepper. Cover and simmer 15 minutes longer.
